  1. Greek: A Collection of Over 100 Essential Recipes by Paragon Books Ltd. Greek food abounds with delicious vegetables, and this book has plenty of delicious (and often simple) recipes. Yes, there's meat, too — all the better to conceal the vegetarian awesome.

  2. Vegetarian Classics: 300 Essential and Easy Recipes for Every Meal by Jeanne Lemlin. Rich corn chowder, robust pasta bakes, and melt-in-your-mouth polenta. It doesn't get better than this amazing, reliable food.

  3. Moosewood Restaurant Simple Suppers: Fresh Ideas for the Weeknight Table by Moosewood Collective. The classic Moosewood brand goes casual and (mostly) simple, with filling, hearty dishes to delight (and confound) the pickiest family.

  4. Grub: Ideas for an Urban Organic Kitchen by Anna Lappe and Bryant Terry. Admittedly, this book is as much manifesto as cookbook, which will be a little too heavy on the political salt for most cooks' tastes. But it's worth including for the coconut quinoa recipe alone.
